Froggy Cupcakes:

Ingredients:
11/2 cups flour7/8 cup caster sugar3 tablespoons butterpinch of salt3 teaspoons baking powder3 eggs1 teaspoon vanilla essence� cup milk3 tablespoons water
Icing:
1 tablespoon butter1 cup icing sugarLittle bit of hot waterGreen food colouringJelly jubes or similar sweets

Method:
Prepare a muffin tin by spraying with non-stick cooking spray.Beat the egg whites till frothy and then add the egg yolks and beat some more. Gradually add sugar and then vanilla. Heat butter, milk and water till butter is melted. Add flour, baking powder and salt to egg mixture and then add the milk mixture. Bake in a warm oven (200 �C) for about 10-15 minutes. To make the icing, soften the butter with a wooden spoon, then add the icing sugar. Add enough hot water to form a thick but spreadable mixture. Add green food colouring and spread cooled cakes with mixture. Decorate cakes with jelly jubes to represent eyes.
